Recipe of The Month: Thanksgiving Dinner For Singles

Thanksgiving Dinner For Singles
This meal is quick and easy, and includes planned leftovers.

2 cups water
2 Tbsp butter
1/2 cup dried or frozen cranberry pieces or raisins
1 or 2 green onions, sliced
1 pkg Buddig deli-sliced turkey meat, chopped
1 6 oz. pkg Cornbread Stuffing Mix (Albertsons sells Signature brand)
(This recipe is modified, so measurements are not the same as printed on package.)

1) Add water and butter and fruit pieces to a saucepan with a lid; bring to low boil.
2) Add onion and meat pieces; stir.
3) Add dry stuffing mix; stir and turn off heat; cover.
4) Let sit for 5 minutes.
5) Remove half of stuffing to large plate; replace cover.
6) Eat while warm.

This recipe makes a meal for now plus leftovers for tomorrow. (Or meals for two.)

You can reheat the leftover stuffing in the same pan
or remove stuffing to a plate and reheat it in a microwave.

You're welcome.

NM Democrats took back the Governor & Lt. Governor positions.
NM Democrats re-elected Senator Martin Heinrich.
NM Democrats took all three Congressional seats.

All the way down the ticket, Democrats won!
We kept both the state Legislature and Senate in control of Democrats.
Even won the big fight for State Land Commissioner.
And NM Democrats put a Latina and a female Native American in Congress.

Did any other states do this?

snippet from poet Langston Hughes [1901-67]

snippet from "Let America Be America Again" [1935] by poet Langston Hughes

The steel of freedom does not stain . . .

We, the people, must redeem
The land, the mines, the plants, the rivers.
The mountains and the endless plain --
All, all the stretch of these great green states --
And make America again!
